What We’re Eating This Week: December Week 1

December is here, and this time of year can get busy fast. Between homeschooling, weekend activities, holiday events, and just regular mom life, having meals planned out ahead of time gives me one less thing to worry about.

I like to plan meals for the whole month and then review them on Sundays. I don’t always stick to my plan but having a guide helps our days run smoother. And I want to encourage you to use this meal plan the same way: as a guide. If you need to swap meals, switch days, or change things up for your family’s preferences, please do! Every family is different, and every week is different.

Throughout this post, I’ve also linked to Youtube videos that are similar to how I cook the meals in my home, just in case you want a little visual help or inspiration. And while I always try to keep our meals as balanced as possible, I also keep them realistic, kid-friendly, and doable for a busy household.

Full Meal Plan for the First Week of December

MONDAY

Breakfast: Pancakes + scrambled eggs + berries
Snack: Oatmeal cookie + fruit cup
Lunch: Pizza + wings + carrot sticks
Snack: Apple slices + peanut butter
Dinner: Chicken stew + rice + plantain + steamed veggies


TUESDAY

Breakfast: French toast + bacon + blackberries
Snack: Oatmeal bar + orange slices
Lunch: Indomie noodles + boiled egg + peas
Snack: Crackers + cheese cubes
Dinner: Efo riro + swallow


WEDNESDAY

Breakfast: Avocado toast + boiled eggs + mixed fruit
Snack: Grapes + pretzels + cheese stick
Lunch: Efo riro + rice
Snack: Carrot muffins + yogurt
Dinner: Stewed beans + fried fish + plantain + a side veggie


THURSDAY

Breakfast: Greek yogurt parfait (yogurt + berries + granola)
Snack: Snack mix (nuts + raisins + whole-grain cereal)
Lunch: Grilled cheese sandwich + tomato soup
Snack: Veggie sticks + ranch
Dinner: Leftovers (I usually mix-and-match from earlier in the week)


FRIDAY

Breakfast: Potatoes, eggs, and bacon breakfast bowl + fruit
Snack: Apple slices + cheese stick
Lunch: Mac and cheese + corn + shredded chicken
Snack: Gingerbread cookies
Dinner: BBQ baked chicken + roasted potatoes + steamed corn

Our theme for homeschool this week is Gingerbread Man so I plan to have them make gingerbread cookies today 🙂


SATURDAY

Breakfast: Stewed eggs + bread
Snack: Mandarins + crackers + cheese
Lunch: Mini tortilla pizzas (use your favorite toppings) + carrot sticks + apple slices
Snack: Applesauce + pretzels
Dinner: Steak & shrimp stir fry + rice


SUNDAY

Breakfast: Overnight oats
Snack: N/A
Lunch: Beef patty + fries + cucumber slices
Snack: Snack mix (carrots + cookies + cheese cubes)
Dinner: Spaghetti + meatball sauce + garlic bread + mixed veggies


This is what we’re eating during the first week of December, and I hope it gives you ideas you can use or tweak for your own family. Meal planning doesn’t have to be complicated. Sometimes it’s just about having a simple roadmap so the week feels a little lighter.
