What We’re Eating This Week: December Week 2

Welcome to the 2nd week of December!

Throughout this post, I’ve also linked to Youtube videos that are similar to how I cook the meals in my home, just in case you want a little visual help or inspiration. And while I always try to keep our meals as balanced as possible, I also keep them realistic, kid-friendly, and doable for a busy household.

If you’re looking for simple ideas to help you flow through the first week of December, here’s what we’ll be eating in our home.


Full Meal Plan for December 8-14

MONDAY

Breakfast: Golden Morn + boiled egg
Snack: Apple slices + peanut butter
Lunch: Indomie noodles + mixed fruits
Snack: Crackers + cheese cubes
Dinner: Yam + eggs


TUESDAY

Breakfast: French toast + bacon + blackberries
Snack: Grapes + pretzels + cheese stick
Lunch: Beef patty + french fries
Snack: Carrot muffins + yogurt
Dinner: Chili + Cornbread


WEDNESDAY

Breakfast: Pancakes + scrambled eggs + mixed fruits
Snack: Oatmeal bar + mandarin slices
Lunch: Grilled cheese sandwich + chili
Snack: Gingerbread cookies
Dinner: Jollof Rice + tilapia fish + plantain


THURSDAY

Breakfast: Greek yogurt parfait (yogurt + berries + granola)
Snack: Snack mix (nuts + raisins + whole-grain cereal)
Lunch: Spaghetti + meatballs + steamed carrots
Snack: Veggie sticks + ranch
Dinner: Leftovers (I usually mix-and-match from earlier in the week)


FRIDAY

Breakfast: Overnight oats
Snack: Apple slices + cheese stick
Lunch: Mac and cheese + corn + shredded chicken
Snack: Mixed fruits
Dinner: Movie Night!!


SATURDAY

Breakfast: Akara + Oatmeal
Snack: Mandarins + crackers + cheese
Lunch: Spaghetti + meatballs + steamed carrots
Snack: Applesauce + pretzels
Dinner: Steak & shrimp stir fry + rice


SUNDAY

Breakfast: Peanut butter toast + eggs + mixed fruits
Snack: N/A
Lunch: Beef patty + fries + cucumber slices
Snack: Snack mix (carrots + cookies + cheese cubes)
Dinner: Efo-Riro and Eba


This is what we’re eating this week, and I hope it gives you ideas you can use or tweak for your own family. Meal planning doesn’t have to be complicated. Sometimes it’s just about having a simple roadmap so the week feels a little lighter.
